Gluten-free Apple Muffins (also no sugar or dairy)


1 cup flour* ¼ cup steel cut oats 1 Tbsp flax seeds 1 tsp baking soda 1 Tbsp psyllium husk powder 1 tsp cinnamon ½ tsp nutmeg 1 ½ tsp cornstarch

2 eating apples, cored and chopped 2/3 cup dairy-free yogurt 1 egg lightly beaten 1 ½ Tbsp canola oil ¼ cup juice (apple or cranberry) *This recipe will work with regular flour but works best with straight rice flour but can also adapt to any gluten free flour (almond, sorghum, etc)


  • Preheat oven to 350 F and grease a 6-portion muffin tin.

  • Whisk together all the ingredients in column one in a large bowl.

  • In a food processor (or by hand) coarse chop the apples and transfer to a second bowl.

  • To the apples, add the remaining ingredients from column two and stir to combine.

  • Stir wet ingredients into dry ingredients to make a batter.

  • Scoop batter into greased muffin tin.

  • Bake for about 30 minutes or until a wooden toothpick comes out clean and dry.
